Coconut Cream Pie Bars

These Coconut Cream Pie Bars taste just like coconut cream pie, but they are easy to eat as bars. The crust is made of butter, and the inside is filled with creamy coconut. This makes them a great dessert for people who love coconut.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/4 cup powdered sugar
  • 2 eggs
  • 3/4 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup shredded coconut
  • 1 cup coconut cream
  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • Whipped cream and toasted coconut flakes for topping optional

Instructions:

Preheat the oven to 350F 175C and grease a 9x9 inch baking pan

In a mixing bowl, combine 1 cup flour, melted butter, and powdered sugar

Press into the bottom of the prepared pan to form a crust

Bake the crust in the preheated oven for 15-20 minutes, until lightly golden

While the crust is baking, in another bowl, beat eggs, granulated sugar, 2 tablespoons flour, and salt until well combined

Stir in shredded coconut, coconut cream, milk, and vanilla extract until smooth

Pour the coconut mixture over the baked crust

Return the pan to the oven and bake for an additional 25-30 minutes, or until set and edges are golden brown

Allow the bars to cool completely in the pan on a wire rack

Once cooled, refrigerate for at least 2 hours before cutting into bars

Top with whipped cream and toasted coconut flakes before serving, if desired
