Grilled Portobello Caprese Salad Stack

A delightful twist on the classic Caprese salad, this Grilled Portobello Caprese Salad Stack is a perfect combination of smoky grilled mushrooms, creamy mozzarella, and sweet cherry tomatoes. The balsamic glaze adds a tangy finish, making it a crowd-pleaser for your next barbecue.

Ingredients:

  • 4 large Portobello mushrooms, stems removed
  • 1 cup cherry tomatoes, halved
  • 8 oz fresh mozzarella, sliced
  • 1/4 cup balsamic glaze
  • 1/4 cup extra-virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Preheat the grill to medium-high heat

Brush Portobello mushrooms with olive oil and season with salt and pepper

Grill mushrooms for 4-5 minutes per side until tender

During the last 2 minutes of grilling, add mozzarella slices on top of each mushroom cap to melt

Remove mushrooms from the grill and let them cool slightly

On a serving platter, stack the grilled Portobello mushrooms, alternating with slices of fresh mozzarella and cherry tomatoes

Drizzle balsamic glaze over the stacks and around the platter

Garnish with fresh basil leaves
