Paleo No-Nut Chocolate Chip Cookies

These paleo-friendly chocolate chip cookies are perfect for those with nut allergies or following a grain and gluten-free diet. They are soft, chewy, and loaded with dairy-free chocolate chips, making them a delightful treat for anyone seeking a healthier alternative to traditional cookies.

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1/2 cup coconut oil, melted
  • 1/2 cup maple syrup or honey
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips

Instructions:

Preheat your oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine almond flour, coconut flour, baking soda, and salt

In a separate bowl, whisk together melted coconut oil, maple syrup or honey, and vanilla extract

Pour the wet ingredients into the dry ingredients and stir until a cookie dough forms

Fold in the dairy-free chocolate chips

Use a cookie scoop to portion out the dough onto the prepared baking sheet, spacing them apart

Flatten each cookie slightly with the back of a fork

Bake in the preheated oven for 10-12 minutes or until the edges are golden brown

Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
