Rainbow Veggie Kabobs
These Rainbow Veggie Kabobs are not only visually appealing but also packed with flavor. Grilled to perfection, they make a colorful and nutritious addition to your barbecue or outdoor gathering.
Ingredients:
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 1 zucchini, sliced into rounds
- 1 yellow squash, sliced into rounds
- 1 pint cherry tomatoes
- 8 wooden skewers, soaked in water
Instructions:
Get your grill ready for hot but not too hot
To make a rainbow effect, thread the different colored vegetables onto the wet wooden skewers one after the other
Add salt and pepper to taste and brush the vegetable kabobs with olive oil
Put the kabobs on a hot grill and cook for 10 to 12 minutes, turning them over once in a while, until the vegetables are soft and have grill marks
Serve the rainbow veggie kabobs with your favorite dressing or dipping sauce right off the grill
