Trail Mix Cookies - A Healthy After-School Snack

Enjoy the goodness of whole grains, nuts, seeds, and dried fruits in these delicious trail mix cookies. Theyre a perfect after-school snack for both kids and adults, providing energy and nutrients in every bite.

Ingredients:

  • 1 cup rolled oats
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey or maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup trail mix nuts, seeds, dried fruits
  • 1/4 cup dark chocolate chips

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a mixing bowl, combine the rolled oats, whole wheat flour, baking soda, ground cinnamon, and salt

In a separate bowl, whisk together the melted coconut oil and honey or maple syrup until well combined

Add the egg and vanilla extract to the wet ingredients and mix until smooth

Gradually add the wet ingredients to the dry ingredients, stirring until just combined

Fold in the trail mix and dark chocolate chips to the cookie dough

Scoop spoonfuls of dough onto the prepared baking sheet, spacing them a few inches apart

Gently flatten each cookie with the back of a spoon

Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown

Remove from the oven and allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
