Olive Oil Brownies with Pistachios, Cacao Nibs and Sea Salt
Ingredients:
- 1/2 cup extra virgin olive oil
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1/4 cup chopped pistachios
- 1/4 cup cacao nibs
- Sea salt, for sprinkling
Instructions:
Start by heating the oven to 350F 175C
A square 8-inch baking pan should be greased and floured
Whisk the sugar and olive oil together in a bowl until they are well mixed
Add the eggs one at a time, making sure to beat well after each one
Add vanilla extract and stir
Sift the flour, cocoa powder, and salt together in a different bowl
Slowly add the dry ingredients to the wet ones and mix them together until they are just combined
Add chopped pistachios and cacao nibs and mix them in
Spread the batter out evenly with a spatula as you pour it into the pan that has been prepared
Spread out the sea salt on top of the batter
In a hot oven, bake for 20 to 25 minutes, or until a toothpick stuck in the middle comes out with a few moist crumbs on it
Let the brownies cool in the pan for a while before cutting them up and serving them
