Roasted Golden Beet & Carrot Dip

This vibrant dip combines the earthy sweetness of roasted golden beets with the subtle sweetness and bright color of roasted carrots, creating a deliciously unique and nutritious dip. Perfect for parties, gatherings, or as a flavorful snack.

Ingredients:

  • 3 medium golden beets, roasted and peeled
  • 3 large carrots, roasted
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 3 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1/4 teaspoon ground cumin
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish

Instructions:

Preheat oven to 400F 200C

Scrub beets and carrots, then wrap individually in foil and roast until tender, about 45-50 minutes for the beets and 30-35 minutes for the carrots

Once cooled, peel the beets and cut into chunks

In a food processor, combine roasted beets, carrots, tahini, garlic, lemon juice, olive oil, cumin, salt, and pepper

Process until smooth

Taste and adjust seasoning if needed

Transfer the dip to a serving bowl, garnish with chopped parsley, and serve with your favorite dippers
