Baked Potato Casserole
This Baked Potato Casserole is a comforting and flavorful side dish thats perfect for any meal. Creamy mashed potatoes are mixed with cheese and green onions, then baked until golden and bubbly. Its easy to make and always a crowd-pleaser
Ingredients:
- 6 large potatoes, peeled and cubed
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 1/4 cup milk
- 1 cup shredded cheddar cheese
- 1/2 cup chopped green onions
- Salt and pepper to taste
- Optional toppings: crispy bacon bits, chopped chives
Instructions:
Preheat oven to 375F 190C
Boil the potatoes in salted water until tender, then drain
In a large bowl, mash the potatoes with sour cream, melted butter, and milk until smooth
Stir in shredded cheddar cheese, chopped green onions, salt, and pepper
Spread the mixture into a greased baking dish
Bake for 25-30 minutes, or until bubbly and golden brown on top
Serve hot, garnished with optional toppings if desired
