Banana Cinnamon Teacake
This Banana Cinnamon Teacake is a delightful Paleo treat, perfect for a cozy afternoon tea. Its made with wholesome ingredients like ripe bananas, coconut flour, and eggs, sweetened with a touch of maple syrup and flavored with cinnamon. Its grain-free, dairy-free, AIP-friendly, and low in starch, making it suitable for a healing diet.
Ingredients:
- 4 ripe bananas
- 4 large eggs
- 1/2 cup coconut flour
- 1/4 cup coconut oil, melted
- 2 tablespoons maple syrup
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions:
Preheat the oven to 350F 175C
Grease a loaf pan with coconut oil
In a mixing bowl, mash the bananas until smooth
Add the eggs, coconut flour, melted coconut oil, maple syrup, vanilla extract, ground cinnamon, baking soda, and a pinch of salt
Mix until well combined
Pour the batter into the greased loaf pan
Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean
Allow the teacake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely
Slice and serve
