Creamy White Chili
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 lb chicken breasts, diced
- 2 cans 15 oz each white beans, drained and rinsed
- 1 can 4 oz diced green chilies
- 4 cups chicken broth
- 1 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper
- Salt and pepper to taste
- 1/2 cup heavy cream
- 1/2 cup shredded Monterey Jack cheese
- 1/4 cup chopped fresh cilantro optional, for garnish
- 1 avocado, diced optional, for garnish
Instructions:
In a big pot, heat the olive oil over medium-low heat
It will take about 5 minutes of cooking after adding the minced garlic and diced onion
Spread out the chicken breasts and add them to the pot
Cook for 5 to 7 minutes, or until all sides are browned
Add the diced green chilies, chicken broth, ground cumin, dried oregano, chili powder, cayenne pepper, salt, and pepper
Mix everything together
After the chili starts to simmer, turn down the heat to low and let it cook for 20 to 25 minutes, stirring every now and then
Once the chili is almost done, add the heavy cream and shredded Monterey Jack cheese and mix them in well
If you want, you can serve the creamy white chili hot with chopped fresh cilantro and diced avocado on top
