Roasted Veg Salad w/ Creamy Avocado Dressing

Ingredients:
- 2 cups mixed vegetables e

- , bell peppers, zucchini, cherry tomatoes
- 2 tbsp olive oil
- Salt and pepper to taste
- 1 ripe avocado
- 1/4 cup unsweetened almond milk
- 1 tbsp lime juice
- 1 clove garlic, minced
- 2 tbsp chopped fresh cilantro
- 1/4 tsp cumin powder
- 1/4 tsp chili powder
- 4 cups mixed salad greens
Instructions:
Preheat oven to 400F 200C
Toss mixed vegetables with olive oil, salt, and pepper
Spread on a baking sheet lined with parchment paper
Roast in the preheated oven for 20-25 minutes, or until vegetables are tender and slightly caramelized
In a blender, combine avocado, almond milk, lime juice, garlic, cilantro, cumin powder, and chili powder
Blend until smooth and creamy
Arrange mixed salad greens on serving plates
Top with roasted vegetables
Drizzle creamy avocado dressing over the salad
Serve immediately and enjoy
