Vegan Guacamole Arepas
These Vegan Guacamole Arepas are a delicious mix of Mexican and Venezuelan food. The creamy avocado goes well with the crunchy cornmeal arepas, making a tasty and filling snack or meal.
Ingredients:
- 2 ripe avocados, mashed
- 1 small red onion, finely diced
- 1 tomato, diced
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper to taste
- 2 cups pre-cooked cornmeal masa harina
- 1 1/2 cups warm water
- 1 tablespoon olive oil
Instructions:
In a bowl, combine mashed avocados, diced red onion, diced tomato, chopped cilantro, lime juice, salt, and pepper to make the guacamole
Mix well and set aside
In a separate bowl, mix the pre-cooked cornmeal with warm water and olive oil to form a soft dough
Divide the dough into 8 equal portions and shape them into flat discs, about 1/2 inch thick
Heat a non-stick skillet over medium heat
Cook the arepas for about 4-5 minutes on each side, or until golden brown
Once cooked, slice open the arepas horizontally and stuff each with a generous portion of the prepared guacamole
Serve immediately and enjoy
