Vegetarian Mexican Salad Boats

Enjoy the vibrant and refreshing flavors of this Vegetarian Mexican Salad served in crisp lettuce boats. Packed with nutritious ingredients, its a perfect light and satisfying meal.

Ingredients:

  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 4 large lettuce leaves, for serving

Instructions:

In a large bowl, combine black beans, corn, cherry tomatoes, avocado, red onion, and cilantro

In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper

Pour the dressing over the salad mixture and toss gently to coat

Scoop the salad into lettuce leaves, creating boats for serving
