Brown Butter Pear Crepes with Maple Butter Glaze
Ingredients:
- 1 cup all-purpose flour
- 2 large eggs
- 1 1/2 cups milk
- 1/4 cup melted brown butter
- 1/4 cup granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 ripe pears, peeled, cored, and thinly sliced
- 4 tablespoons unsalted butter
- 1/4 cup pure maple syrup
- Powdered sugar, for dusting
Instructions:
In a blender, combine flour, eggs, milk, melted brown butter, granulated sugar, vanilla extract, and salt
Blend until smooth
Let the crepe batter rest for 30 minutes at room temperature
Heat a non-stick skillet over medium heat and add a small amount of butter to coat the bottom
Pour 1/4 cup of crepe batter into the skillet, swirling to spread it evenly
Cook for about 1-2 minutes until the edges start to brown and the crepe is set
Flip the crepe and cook for an additional 1-2 minutes until lightly golden
Repeat with the remaining batter
In a separate skillet, melt the 4 tablespoons of unsalted butter over medium heat
Add the pear slices and saut for about 3-4 minutes until they are tender and lightly caramelized
Add the pure maple syrup to the skillet with the pears and cook for an additional 2 minutes, allowing the flavors to meld and the glaze to thicken slightly
To serve, place a few slices of brown buttered pears in the center of each crepe, fold the crepe over, and drizzle with the maple butter glaze
Dust with powdered sugar and serve hot
