Beetroot and Caper Salad

With the earthy sweetness of beets and the sour brininess of capers, this Beetroot and Caper Salad is a bright and refreshing dish. This salad goes well with any meal.

Ingredients:

  • 2 medium-sized beetroot, boiled, peeled, and diced
  • 2 tablespoons capers, drained and rinsed
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley leaves, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Instructions:

In a mixing bowl, combine the diced beetroot, capers, red onion, and chopped parsley

In a separate small bowl, whisk together the olive oil and balsamic vinegar to create the dressing

Drizzle the dressing over the salad ingredients and toss gently to coat

Season the salad with salt and pepper to taste

Let the salad sit for about 10 minutes to allow the flavors to meld together

Serve the Beetroot and Caper Salad as a side dish or a light appetizer
