Spaghetti Squash With Bacon, Spinach, and Goat Cheese
Ingredients:
- 1 medium spaghetti squash
- 4 slices of bacon, chopped
- 2 cups of fresh spinach leaves
- 1/2 cup of crumbled goat cheese
- Salt and pepper to taste
- Olive oil for drizzling
Instructions:
Turn on your oven and heat it up to 375F 190C
Cut the spaghetti squash in half down the middle, and scoop out the seeds
Put the squash halves on a baking sheet with the cut side down
Place the squash in an oven that has already been heated
Bake for 40 to 45 minutes, or until it is soft and a fork can easily go through it
In a skillet over medium-low heat, cook the bacon until its crispy while the squash is baking
Take the bacon out of the pan and let it drain on paper towels
Put the fresh spinach leaves in the same pan with the bacon grease and cook them until they wilt
When the squash is done, use a fork to pull the flesh apart into long strands
Put the strings in a big bowl
Put the cooked bacon and spinach that has been sauted into the bowl with the spaghetti squash
Mix everything together
On top, crumble some goat cheese, drizzle some olive oil on it, and add salt and pepper to taste
